Despite the name, no relation to Italy: paper-thin dough folded around a filling of minced meat or chicken, egg, onion, peppers and cheese, then griddled in butter until crisp and served in squares.

HOW TO IDENTIFY IT

Watch it being made at any night-market stall - the dough is flipped and stretched like a handkerchief. Sweet versions with banana and chocolate exist and are delicious, but a 'pizza' without egg and mayo-ketchup on top is an impostor.
