HOW TO IDENTIFY IT

Look for plump green pods (brown means old) that feel full, not hollow. Crush one between your fingers - the fragrance should hit immediately and linger on your skin.

CULTURE & KITCHEN

Essential in kahawa (Swahili coffee) and pilau. Pod-by-pod crushing into coffee is a small daily ritual in Stone Town's cafés, especially at Jaws Corner.
